Ingredients
200 gr. sausage
1 / 2 onion
30 gr. extra virgin olive oil
1/2 glass of white wine
1 stalk celery
540 gr. pot of lentil soup
20 gr. double concentrated Tomato in tube
2 rosemary sprigs
2 sage leaves
Salt to taste
black pepper to taste
Preparation
Prepare the sauce by finely chopping the carrot, celery and onion. Heat the oil in a pan. Pour the chopped mixture for the sauté and leave to cook on a low heat for 7/8 minutes or until it is well cooked. In the meantime, extract the sausage from the casing, pressing on one side to make the meat come out compactly so as to create small slices. Chop the sage and rosemary until finely chopped. When the sauce is well stewed, pour in the sausages and flavor with the chopped herbs, leave to brown over medium heat for 3-4 minutes, then add the white wine. Let the wine evaporate and add the concentrated tomato and then also pour in the lentils with their liquid. Add salt and pepper to taste and let everything heat up for a few minutes. Finally, garnish with a few sprigs of fresh rosemary and serve.
