Pasta with broccoli in a pan

Ingredients

500 gr. pasta like macaroni

1 Kg. broccoli (cauliflower)

1 saffron

1 onion

60 gr. sultanas and pine nuts

20 gr. tomato extract “Contorno”

2 anchovy fillets

50ml. extra virgin olive oil

Salt to taste

pepper to taste

Preparation

Wash the broccoli carefully and boil it in pieces in salted water. In a pan, fry the finely sliced ​​onion in plenty of oil, adding the saffron dissolved in a little warm water, the sultanas and the pine nuts, leave to flavor and also add the chopped broccoli. Let it fry over high heat, season with salt and pepper, add a ladle of the broccoli cooking water, a spoonful of tomato extract and finally the anchovies already dissolved in the oil. Separately, boil the pasta in the broccoli water, drain it al dente, season it with the ready-made sauce and let it rest for at least 10 minutes before serving.
